The Chicago Restaurant I Keep Returning to for the Salmon Vesuvio Alone
Some restaurants make a great first impression. Others earn a permanent place on your list because every return visit is just as memorable as the first.
That has been my experience with Adalina in Chicago.
I originally visited for my birthday, expecting a celebratory dinner. What I didn’t expect was to discover one of the best meals I’ve had in the city. Since then, I’ve returned several times, exploring more of the menu while repeatedly ordering one dish that continues to stand above the rest.
We began the evening with the grilled octopus, which arrived perfectly tender with a beautiful char that added depth without overpowering the delicate seafood. It was an ideal way to start the meal and immediately set the tone for what followed.
Around the table, my friends ordered the Lamb Rack and Chicken Milanese. Both dishes were thoughtfully prepared, but the lamb quickly became my favorite of the two. It was remarkably tender, juicy, and packed with rich, well-balanced flavor that showcased the quality of the ingredients without unnecessary embellishment.
As impressive as those dishes were, the standout of the evening and every visit since has been the Salmon Vesuvio.
The salmon develops a beautifully crisp exterior while remaining moist and flaky inside, creating a satisfying contrast in texture. Served alongside pillowy potato gnocchi, the dish strikes a balance between elegance and comfort. The gnocchi is exceptionally light, soft enough to almost melt with each bite while still maintaining its delicate structure. It’s easily the best gnocchi I’ve had, and the reason I continue coming back.
I’ve explored other menu items over multiple visits, but the Salmon Vesuvio remains the dish I recommend first to anyone dining here.
The cocktail program is equally impressive. The Espresso Martini offers a rich coffee flavor balanced by smooth vodka, while the Gold Digger brings bright tropical notes with passion fruit and sparkling prosecco. The Beez in the Trap combines tequila, blueberry, honey, and lemon into a refreshing cocktail that’s both vibrant and well-balanced. Each drink feels thoughtfully crafted rather than simply following current cocktail trends.
Beyond the food and drinks, Adalina creates an atmosphere that invites guests to linger. From the dramatic murals and warm lighting to the sophisticated décor, the restaurant manages to feel upscale without becoming intimidating. It’s equally suited for celebrations, date nights, or an evening with friends.
Perhaps the most consistent part of every visit has been the hospitality. Each time I’ve dined at Adalina, the staff has been welcoming, attentive, and genuinely enthusiastic about the dining experience they provide. That consistency has become one of the restaurant’s greatest strengths.
Great restaurants inspire return visits because they deliver more than excellent food; they create experiences worth repeating. Adalina has done exactly that for me, and after multiple visits, it remains one of my favorite dining destinations in Chicago.
